Frugal Family Favourite is back!
If you are a reader here you will know that I am all about cheap, (but healthy) quick and easy dinners. This one ticks all of those boxes. I have adapted my recipe from the one I found here.
This one is a winner for my family because it comes in under R40 to make and there is always enough for us to eat leftovers for lunch for the next day or two. And of course, my baby loves it! Score!
½ x Large Onion
2 x Chicken Breasts (cut into bite sized pieces)
1 x Cup of Rice
650ml x Chicken Stock
Frozen Broccoli as desired. (You can definitely use fresh as well, but I find that frozen broccoli is cheaper in the long run.)
Sauté the onions in some oil until they soften and add some garlic if you like. Then add the chicken and fry until golden. Move the onions and chicken to the side of the pot and add a little more oil. Then add the cup of rice to the fresh olive oil and simmer for a short while. 2 or 3 minutes will do the trick.
Add in the chicken stock and let it all simmer for 12 minutes. You do need to stir it from time to time but it doesn’t need to be stirred continuously. Once that has simmered for 12 minutes, add in the broccoli and simmer for a further 8 minutes.
At this point the rice and the broccoli should be done, but if not, simmer it for a bit longer, until they are cooked.
The original recipe now calls for 2 cups of cheese to be stirred in, but since we prefer to eat a bit healthier, we will grate some cheese over the top of our bowls, if we feel inclined. I don’t think it’s really necessary to have so much cheese, especially if you are living on a tight budget. Either way, this meal is great regardless.
