I am so excited to share this recipe with you today. Why, you ask? Because it costs around R100, I cook once and we eat 3 times in the month! YES please!
We love a little Mexican fiesta in our house. The flavours are bursting and you can even serve it with Guacamole and Salsa if you feel up to making those extras. If not, it’s great as it is.
- 500g mince
- 1 onion diced
- 1 can whole tomatoes
- 4 fresh tomatoes diced
- 1 can Butter Beans (drained and rinsed)
- 1 small pack frozen corn
- 1 sachet of Tomato Paste
- 1 Green Pepper diced
- 3 Tbsps Woolies Nada Too Hot Enchilada Spice Mix (Red Box)
- 500ml water
- 1 tsp beef stock powder
- Salt and Pepper to Taste
- Mexicorn Nacho Chips (for a topping)
- Grated Cheese (for a topping)
So, basically, this is what I do. Brown the onion and mince in a medium pot. Sometimes I will add a little garlic to this pan. It depends on how I’m feeling.
While that is cooking, I chop up the green pepper and tomato.
Once that is done, everything gets dumped into the slow cooker (except the chips and cheese) and I let it cook for 6 hours on low.
Once our littlie is in bed, I switch off the slow cooker, dish up 2 bowls for my husband and I to eat for dinner and divide the rest into 2 freezer containers to use later on in the month. We grab a handful of Nachos, crush them up a bit and sprinkle over the top of the soup and then top it off with grated cheese. MMMmmmm!!
This has become one of our families all time favourite meals because it is so easy to make and SO SO SO tasty! Then there are two other nights in the month when I don’t have to cook. And one last thing to love about it……the recipe is so versatile. It’s easy to change and really hard to mess up.
